In French, the word hermitage can mean “a hideaway.” In the fall of 2024, the Hermitage quietly opened its doors below Restaurant Hiramatsu Hiroo in Hiroo, Tokyo.

The restaurant is characterized by a timeless beauty and authenticity that will never fade. Every detail is born out of a profoundly vibrant sensibility and an intellect that rejoices in the dynamic freedom of the individual.

Chef Kazuki Inoue wields traditional techniques, fresh ingredients, and delicate tableware to craft an à la carte menu that is never the same from one night to the next. Tasting wines are served table-side by general manager Masami Kono, whose spirited service enlivens an expansive wine list featuring more than 3,000 labels. Together, the two conduct a complex symphony of French cuisine.

Whether you are looking to feast in splendor or enjoy a single drink or dish before heading out into the night, the doors of this little sanctuary will warmly welcome you.

Chef Kazuki Inoue’s love for authentic French cuisine led him to start training at Restaurant Hiramatsu Hiroo in 2012. Since opening the Hermitage in 2024, he has prioritized staying true to his ingredients above all else as he develops culinary creations that can only result from a continuous pursuit of his art. As co-founder of the Hermitage, he explores the ways in which magnificent French dishes can be made ever more sublime when paired with wine and presents his discoveries to his customers.

The Hermitage’s general manager, Masami Kono, has studied the art of service at Restaurant Hiramatsu Hiroo since 2014, where she acquired expertise in wine, food, and art. Her sensibilities, as co-founder of the Hermitage and as an individual, infuse the space in a way that creates a harmonious ambience with her customers as she crafts a dining experience—one with a focus on flavor, beauty, and authenticity—that feels new and exciting for everyone.
